This is our 5th summer on Vancouver Island.

What started as a small idea has grown into something shaped by this community, your morning coffee runs, your weekend treats, and the pastries you keep coming back for.

So this summer, we brought back the favourites.

VANILLA * SALTED CARAMEL * LEMON CURD * PISTACHIO * and of course, our RASPBERRY GANACHE, which made its return earlier this spring

Some may look a little different than you remember. We played with a few new shapes and finishes to keep things fresh and exciting, but the flavours you love are exactly the same.

A familiar flavour, dressed for summer. 🍋

Our lemon curd pastry is back, this year in a brand new shape. Layers of buttery laminated dough folded into an open-top cube, filled with our house-made lemon curd and finished with a playful little meringue daisy.

A little something different from our usual day at the bakery.

We recently had the chance to create these croissant towers for Sage Medspa reopening celebration, and they turned out even better than we imagined.

Made entirely from our sourdough croissants and decorated with fresh flowers, they were such a fun way to showcase the beautiful layers and colour that make laminated pastry so special.

Projects like this don't come around often, but they're a great reminder that baking can be both delicious and beautiful.

FREYA Nordic Baking & Kaffe is looking for a full-time Lead Barista & Team Supervisor to join our team in COURTENAY.

This is not a seasonal or summer position. We're looking for someone who wants to grow with us long-term and become an important part of our team and community.

We're looking for someone who:

• Has at least 1 year of experience in a quality-focused café environment, is confident preparing espresso-based beverages, and is passionate about coffee as a craft
• Genuinely enjoys hospitality and making people feel welcome
• Loves coffee and is interested in fermented pastries and breads
• Takes pride in cleanliness, organization, and attention to detail
• Enjoys getting to know regular guests and creating memorable experiences
• Is proactive, dependable, and notices what needs to be done without being asked
• Enjoys working as part of a diverse and multicultural team

At FREYA, quality and hospitality come first. While there are busy moments, we're not a drive-through coffee shop. We believe great coffee and genuine customer connections take time, and we're looking for someone who shares that philosophy.

What we offer:

• Starting wage of $22/hour

Schedule:
• Weekend availability is required

Did you know the cinnamon bun has deep Scandinavian roots? 🇸🇪
The Swedish kanelbulle became a Nordic classic through the tradition of fika and has been part of Scandinavian baking culture for generations.

Our take? A giant sourdough sticky bun, slowly fermented over days for a light, fluffy texture and deep flavour. Filled with seasonal berries, topped with homemade caramel and roasted pecans.

Big, sticky, buttery comfort: the FREYA way.
