happy october everyone!! 🍂🐻

i need to start making some more fall inspired recipes, but wanted to share this one as it’s both a warming, cozy dish but also refreshing! this is a random vegan french toast dish I whipped up one day and i still think about it 🥹

i love making french toast with sourdough bread as it’s more blood-sugar-balancing, gentler on the stomach and easier to digest than regular bread. i looove the sourdough from , if you’re a local! 📍

the key here is pairing the carbs with enough fibre and healthy fats to slow down the sugar release and keep you satisfied. we get healthy fats from the coconut yogurt and nuts/seeds, and the fibre from the fruit and sourdough. to boost your satiety/protein, you can stir a scoop of vegan protein powder right into your coconut yogurt before topping the toast! i use coconut yogurt + vanilla for this! 🤍

just soak your bread in a simple flax-egg, cinnamon, coconut sugar and plant milk batter, pan-fry, and load it up. it’s the perfect, weekend treat. 🫐

I’ve been dreaming about this platter since I finished eating it! 🤤

I love making Japanese/Korean-style spreads, and this one was so delicious and balanced with all essential protein, fat, fiber and carbs!

Crispy Big Mountain Soy-Free Tofu cooked up in that amazing Naked & Saucy Teriyaki (it’s gluten-free!). Paired with vegan fried rice—loaded with peppers and green onion—plus a Big Mountain Breakfast Patty on the side. The pickled veggies (ginger and carrots) and fresh cucumber are essential! 🥒🥕

The Simple How-To:

1. Tofu: Pan-fry Big Mountain Soy-Free Tofu until golden, then toss generously with Naked & Saucy Teriyaki sauce until coated and caramelized.

2. Fried Rice: Sauté diced bell peppers and green onions. Add leftover cooked rice and stir-fry with a splash of soy sauce (or tamari for GF), a dash of sesame oil, and black pepper.

3. Assemble: Serve on your favorite platter with the fried rice, I had to add a Big Mountain Breakfast Patty, sliced cucumber, pickled ginger, and pickled carrots!

What’s better than having Mango Sticky Rice (Oats) for breakfast? ✨🥥

I played around and made a creamy coconut oat recipe (high-protein), and topped it with juicy mango, pumpkin seeds, almonds & black sesame for the perfect dessert for breakfast! 🥭

Recipe:

• ½ cup oats
• 1 cup coconut milk + ½ cup water
• 1 scoop vanilla protein powder (optional: I used Botanica Health Vegan Vanilla Protein)
• 1 tbsp chia seeds or flax

• 1 tbsp coconut cream
• ½–1 mango, sliced
• additional toppings: pumpkin seeds, sliced almonds, black sesame, or crunchy mung beans

Cook oats in coconut milk + water until creamy. Stir in protein (if wanting high protein) + chia/flax. Swirl in coconut cream. Top with mango & seeds. 🌿

Nourishing, sweet, and perfect for breakfast or dessert!

Here’s an inspiring day of vegan eats — all about adding in nourishment that feels grounding, energizing, and abundant!! 🤭💕

🫐 BREAKFAST → Sprouted oatmeal with almond butter, pumpkin seeds, berries, coconut yogurt, shredded coconut & protein powder for that extra boost of plant-based fuel.

🥗 LUNCH → Lentils, roasted beets, kale, Japanese sweet potato, zucchini & asparagus, all brought together with mineral-rich Zoomers Broth and a creamy tahini-lemon drizzle. Deeply grounding + gut-loving.

🥢 DINNER → Coconut rice, extra firm tofu, avocado, mango, coconut chips, pickled veggies, and a savory poke sauce from Fernie. Bright, fresh, and so satisfying.

Nourishment feels so much sweeter when it’s about love + abundance 🌿✨ Of course there’s a few snacks in here as well, but didn’t take any pics 🤗

Looking for some places to try out as a vegan in Calgary?? Thought I’d share some places I tried this past weekend! ⬇️

🍦 Village Ice Cream → Choco Ritz (9/10): salty Ritz + chocolate chunks = surprisingly sooo good. Iced Capp (10/10): coffee ice cream is my weakness & this one was PERFECT. Price: ~$6.

🍕 Una Pizza & Wine → Vegetarian pizza made vegan w/ NUMU cheese (10/10): honestly may be the best vegan pizza in YYC. Adding their basil pesto oil on the side is a must. Price: around $24.

🌮 Native Tongues → Oyster Mushroom Tacos (7/10): tasty + unique but needed something creamy (guac on top would help!). Guac & Chips (9/10): very fresh & a classic, and super satisfying. Price: tacos ~$7 each, guac & chips ~$17.

🌯 Salt & Pepper → Vegan Burrito w/ Chorizo (9/10): I was surprised with a flavour-packed burrito & bigger portion than expected! The chorizo was delicious, but a vegan crema was definitely missing. Price: ~$17.

🍜 Nan’s Noodle House (fully vegan 💚) → Vegan Laksa (10/10): cozy, rich, warming, and one of my favourite soup I’ve tried there. Spring Rolls (8.5/10): good but nothing special compared to the laksa. Price: Laksa ~$18. Spring Rolls ~$12.

Calgary honestly has so many delicious vegan options - I’m in awe everytime I visit! Have you tried any of these? Or do you have a fave vegan-friendly place I should check out next?

If you're looking for an authentic taste of Thailand in Medicine Hat, look no further than Pock Pock! This newly opened restaurant has quickly captured my heart (and taste buds) with its delicious food options and welcoming atmosphere. As someone who loves exploring new flavors, I was so eager to try out their menu. Join me as I break down my experience with each dish, highlighting what made this meal truly special ⬇️

Entree: Pad Thai (Sub Tofu/No Egg) ⭐⭐⭐⭐⭐ (5/5)
The flavour of the Pad Thai was incredible, a great combination of savory and sweet. The tofu was nice and crispy, and flavoured super well! Reminded me exactly of Pad Thai in Thailand! The presentation was beautiful as well. I loved the peanuts on the side as well, so you can choose if you’d like them or not!

Appetizer: Spring Rolls ⭐⭐⭐⭐ (4.5/5)
The spring rolls were so fresh, crunchy on the outside and flavourful on the inside! You can’t go wrong with spring rolls, and these were such a yummy way to start the meal! Simple but delicious!

Dessert: Mango Sticky Rice: ⭐⭐⭐⭐⭐ (5/5)
I mean… I’m a mango rice fanatic so when we saw this, we had to indulge. And let me tell you, I was NOT disappointed! I love that they top it with the crispy mung bean, as that’s so authentic to how it is in Thailand! I was in love - definitely try it out!!

Vegan Options: ⭐⭐⭐⭐ (4.5/5)
They have tons of vegetarian/vegan options, and are super willing to modify lots of their dishes! I love that they have an appetizer and a dessert that’s vegan as well!

Service: ⭐⭐⭐⭐ (4.5/5)
The ladies working there were incredibly sweet! They were so understanding of me being vegan, and really want to make your experience one full of love. The chef even came out to check up with us!

Atmosphere: ⭐⭐⭐ (3.5/5)
The atmosphere was clean & they made sure the tables were well tidied up! I would love to see more Thai decor, or some more unique lighting to really bring a mood into the restaurant. Some unique music & maybe some more plants/photos of the food or of the streets of Thailand on the walls would be cool!

Value: ⭐️⭐️⭐⭐⭐️ (5/5)
Average pricing for food in Medicine Hat, a bit more expensive than some Asian style restaurants but most definitely worth the price for some authentic Thai food!

OVERALL REVIEW: ⭐️⭐️⭐⭐ (4.5/5)
Every dish was a testament to authentic Thai cuisine, and the staff were incredibly accommodating. Pock Pock is a must-visit for anyone in Medicine Hat! 🍽️🌱
