The origin story of this iconic regional pie is that in the 1950’s. There wasn’t a nearby mushroom farm when the original pizza place, Volcano’s, was training the generation of dough-slingers who would go on to open their own shops, make this idiosyncratic topping combination the area’s signature style. Fresh mushrooms are said to release alot of moisture while cooking which can cause soggy crust. Yes you can order Fresh mushrooms at Windsor Pizza Co .. but maybe give the canned ones a try! 😋
