No-Bake Mini Banana Cream Pies
Ingredients
For the crust
* 1½ cups graham cracker crumbs
* 6 tbsp unsalted butter, melted
* 2 tbsp granulated sugar
For the filling
* 1 package (96 g / 3.4 oz) instant vanilla pudding mix
* 2 cups cold milk
* 2 ripe bananas, sliced
* 1 cup whipped topping or freshly whipped cream
For garnish
* Additional whipped cream
* Banana slices
* Crushed graham crackers (optional)
Instructions
1. **Make the crust**
* Combine graham cracker crumbs, melted butter, and sugar.
* Press the mixture into 8–10 muffin cups lined with paper liners or into mini tart pans.
* Refrigerate for 20–30 minutes until firm.
2. **Prepare the filling**
* Whisk the pudding mix and cold milk for about 2 minutes until thickened.
* Fold in the whipped topping until smooth and creamy.
3. **Assemble**
* Place a few banana slices in each chilled crust.
* Spoon or pipe the pudding mixture over the bananas.
4. **Chill**
* Refrigerate for at least 2 hours, or until set.
5. **Garnish and serve**
* Top with whipped cream, extra banana slices, and a sprinkle of graham cracker crumbs if desired.
Tips
* For the best texture, assemble the pies the same day you plan to serve them.
* Lightly brush banana slices with lemon juice to help prevent browning.
* For extra flavor, add a pinch of cinnamon or a splash of vanilla extract to the filling.
