The Oyster Royale is built on one of the raw bar’s most enduring pairings: oysters and caviar.

Both bring natural salinity and a clean ocean character, while the mascarpone crème adds richness and the shallots bring just enough sharpness to keep the bite balanced. The result is layered, luxurious, and deliberately composed so the oyster still remains the centre of it all.

Oysterfest is entering its final week, which means there are only a few days left to enjoy everything we created for the occasion. 🦪🥂Enjoy $2 oysters all day, every day through September 7, plus our limited-time Charbroiled Oysters with garlic butter and parmesan, six for $15, or the Oyster Royale with mascarpone crème, Chef’s Reserve caviar and shallots for $10.

For something a little more indulgent, our Oysters + Bubbles pairings include a dozen oysters with two glasses of Cabert Prosecco for $59, two dozen with a bottle of Villa Sandi La Rivetta 120 Valdobbiadene Prosecco for $95, or two dozen with a bottle of Piper-Heidsieck Ch*****ne for $195.

There’s a reason we call it Burlington’s most indulgent Happy Hour. From 4–6 PM daily, explore our raw bar with nigiri and sashimi starting at $2.50 per piece, nibbles from $9, and cocktails for $12. You’ll also find 16 oz draught for $8, 8 oz w**e pours for the price of 5 oz, and half-price bottles of w**e.
