If you’re going out for coffee, you should be getting the best cup we can make.

That’s why when Seventh opens
we won’t be batch brewing coffee and letting it sit around. Every brewed coffee will be ground fresh and made to order, one pour-over at a time.

It takes us a little longer. It takes a little more work.

We’ve been talking a lot about the cafĂ© lately.

But behind all of that, we’re still doing what we’ve always done: roasting some damn good coffee.

This Ethiopia Sidama Bombe is a beauty

This is apparently what we do with our weekends now.

Six cups. Different milks. Same coffee. Blind taste test.

Because if we’re going to obsess over the coffee, the espresso, the water and how every drink is made, it doesn’t make much sense to treat the milk as an afterthought.

So we’re testing it. Side by side. More than once. And probably arguing about it more than any reasonable person should.
