Cotto88 Italian Eatery is a family operated restaurant serving customers around the world since 1988. We are located in the up-and-coming town of Bond Head (west of Bradford), off of hwy 400, just north of Vaughan. Our culinary spirit originates in south-central Italy, in the town of Terracina. We fuse traditional southern Italian cuisine with other techniques and recipes from around the Italian peninsula.
We pride ourselves with the intimate atmosphere of our restaurant and strive to honour our mission to bring a piece of the Italian dining experience to our customers through effortless cuisine & home style Italian hospitality. Our ethos is hospitality first. The cuisine at Cotto88 Italian Eatery is centered around fresh top quality ingredients, sentimentality and traditional simplicity. Our menu and extensive selection of daily specialty dishes including appetizers, seafood, meats, pasta, pizza, carpacci, and more.
The Ideal Candidate:
- Is looking to learn new techniques and skills from a chef/entrepreneur with over 30 years of international culinary and restaurant management experience.
- Is eager to grow and work towards becoming a well rounded Chef, gaining knowledge on kitchen management and leadership.
- Prioritizes cleanliness and organization (work station, fridges, mise en place, etc.)
- Has working knowledge on preparing and cooking in a kitchen specialized in Italian cuisine (pasta, pizza, seafood, meats).
- Able to follow instructions and adapt to the needs of the restaurant
- Minimum 3 years experience working as a Sous Chef or equivalent training.
Recent culinary arts graduates (or equivalent) looking to gain experience are welcome to apply.
Italian speaking will be considered an asset.
Key Responsibilities
- Vegetable Preparation
- Mise en place prep for line
- Making fresh focaccia daily from scratch*
- Making desserts* (crème brule, tiramisu, etc.)
- Cooking fresh seafood and meats
- Prioritizing cleanliness and organization
- Able to take imitative to ideate daily specials with head chef
*training will be provided if necessary
