The art of Moroccan cuisine

Moroccan cuisine is topically a mix of Berber, Arabic , Andalousi and Mediterranean cuisines, with a slight European and Sub - Saharan influences Spices:

Liqama or mint : is the most important ingredient in the national Moroccan drink : green tea ( Atay)
Louisa: verbena is also used in tea or infusion . It’s valued his healing qualities
Anis: os used in bread- pastries and sweet soups
Oils :olive oil is the best oil used in Moroccan dishes
Scented waters:
Orange blossom water: is an important ingredient in desert like milk pastilla sweets and some drinks
Dried fruit and Nuts:
Almond and walnuts are the most commonly used in Morocco in : pastilla sweet and also tajines alongside dried fruit( prunes - abricots- dates)
Preserves:
Morocco is known by its olives and its exiting preserves
Green and red olives :are used in many tajines Recipes and salads
Black olives : are important for breakfast
Preserved lemon :is another key ingredient in many tajines recipes
Harissa: hot sauce is used to spice up couscous- marinades - sandwich’s ans some tajine ...
