CUVÉE M — Chardonnay & Pinot Blanc

On 7 October 2025 we picked the very first grapes from the vineyard behind Restaurant Modest. Together with Brouwerij 3 Fonteinen, they became this one-off fruit lambic.

Our own Chardonnay and Pinot Blanc macerated for five months on young lambic from four different oak barrels, a lambic brewed entirely with grains from the Pajottenland. With 480 grams of grapes per litre, it’s where lambic and w**e meet.
