Epazote of welriekende ganzevoet in het Nederlands, is een zeer typisch, aromatisch kruid uit Mexico. De uitgesproken smaak is moeilijk vast te pinnen: kruidig, aards, toetsen van anijs, citrus en hars.

Traditioneel wordt het in Mexico heel veel gebruikt als bonenkruid, maar in Tatemado exploreren we graag het volledige spectrum van mogelijkheden.
Het voegt een laag smaak toe die onmogelijk op te vangen is met andere kruiden.

Een smaak die onmiskenbaar naar Mexico proeft.

Epazote, or “welriekende ganzevoet” in Dutch, is a very distinctive, aromatic herb from Mexico. Its pronounced flavor is hard to pin down: spicy, earthy, with notes of anise, citrus, and resin.

Traditionally, it’s widely used in Mexico as a seasoning for beans, but at Tatemado, we love to explore the full spectrum of possibilities.
It adds a layer of flavor that’s impossible to replicate with other herbs.

Het roosteren van ingrediënten in het vuur is een eeuwenoude kooktechniek in Mexico die een essentieel onderdeel uitmaakt van de culinaire cultuur.
Het restaurant ontleent z'n naam hieraan en het roosteren boven open vuur geeft rokerige accenten en diepe smaken aan de vele klassieke moles, salsas en guisados.

Oostende is een van de drie kuststeden met een actieve visserij. Elke dag varen kustvissers uit om 's morgens met hun buit aan te landen op de vistrap. We kijken, we selecteren de beste vis en behandelen die met zorg om zo het product wat onze vissers te doen schijnen.

De ster in onze eerste gang is dagverse vis die we droogzouten met een huisgemaakte sal de chapulin, een techniek die je kunt vergelijken met hoe Scandinavisch gravlax zalm gepekeld wordt.

Zo laten we de vis op zijn best, met een maximum aan smaak, voor we die laten zwemmen in de aguachile.

Ostend is one of three coastal cities with an active fishing industry. Every day, coastal fishermen set out to sea and land their catch at the fish market in the morning. We inspect the catch, select the best fish, and handle them with care to do justice to the product our fishermen bring in.

The star of our first course is fresh caught fish that we dry cure with a homemade sal de chapulin, a technique similar to how Scandinavian gravlax salmon is cured.

This allows the fish to be at its best, with maximum flavor, before we let it “swim” in the aguachile.

Interieur.

De muren en het kleur zijn geïnspireerd op drie dingen:
Het oeuvre van Luis Barragan, een Mexicaanse architect. De rode vulkanische grond van los altos de jalisco; het hartland van de tequila productie en de pueblos magicos en de koloniale stadjes in Mexico.

De popjes zijn gemaakt door een Mexicaanse kunstenaar, Juan Peza, die lange tijd in Borgerhout heeft gewoond met zijn vriendin Hannah. De beeldjes zijn gebaseerd op de figuren waarin de bewoners van Oaxaca zich verkleden voor de folkloristische dans "danza de los negritos".

De maskers naast de keuken worden in Mexico gebruikt bij volksdansen en de oloteras boven de grote muur werden oorspronkelijk gebruikt om de maïskorrels van de kolf te halen, maar nu zijn ze vooral decoratief door het gebruik van de kleur van verschillende maïssoorten.

Op die manier blijven we dicht bij de basis van de Mexicaanse keuken, niet alleen in de keuken maar ook in het interieur.

Interior.

The walls and color scheme are inspired by three things:
The work of Luis Barragán, a Mexican architect; the red volcanic soil of Los Altos de Jalisco, he heartland of tequila production; and the pueblos mágicos and colonial towns of Mexico.

The figurines were created by a Mexican artist, Juan Peza, who lived in Borgerhout for many years with his girlfriend Hannah. The figurines are based on the characters that the residents of Oaxaca dress up as for the folkloric dance “danza de los negritos.”

The masks next to the kitchen are used in Mexico for folk dances, and the oloteras above the large wall were originally used to remove corn kernels from the cob, but now they serve primarily as decoration thanks to the colors of different corn varieties.

In this way, we stay true to the roots of Mexican cuisine, not only in the kitchen but also in the interior design.

De basis van de Mexicaanse keuken is mais. Maar om als basisvoedsel te kunnen dienen heeft mais een nixtamalisatieproces nodig. Dat is het koken van de korrels met gebluste kalk, om zo vitaminen en mineralen uit de plant beschikbaar te maken voor het menselijk lichaam.
Bijkomend voordeel: je krijgt een deeg, masa, wat elastisch genoeg is om tortillas mee te maken. Nixtamalisatie is een techniek die al duizenden jaren bestaat in Mesoamerika en zorgt voor de basissmaak van de Mexicaanse keuken.
In Tatemado bewaren we Mexicaans culinair erfgoed door zelf nixtamal te maken, maar we maken het Oostends: de kalk die we nodig hebben halen we uit de schelpen van Oostendse oesters uit de Spuikom.
Een methode die door de Yokot'an bevolking van Tabasco gepionierd werd, maar langzaam aan in onbruik raakt.

Corn is the foundation of Mexican cuisine. But in order to serve as a staple food, corn must undergo a process called nixtamalization. This involves cooking the kernels with calcium hydroxide to make the plant’s vitamins and minerals available to the human body.
An added benefit: you end up with a dough, called masa, that’s elastic enough to make tortillas. Nixtamalization is a technique that has existed for thousands of years in Mesoamerica and provides the foundational flavor of Mexican cuisine.
At Tatemado, we preserve Mexican culinary heritage by making our own nixtamal, but we do it the Ostend way: we source the lime we need from the shells of Ostend oysters harvested from the Spuikom.
A method pioneered by the Yokot’an people of Tabasco, but one that is slowly falling into disuse.

Ik kijk uit naar alle maanden die nog gaan komen om dat alles te blijven delen met jou.

1 month of sharing my passion for Mexican gastronomy and local produce. 1 month of sharing moments with each other. 1 month of surprises on the plate. 1 month of intimate dinner dates and fun loving groups. 1 month of copitas de mezcal.

8/8 is ocho-dag.

Tequila Ocho is onze huistequila en een favoriet bij ons in het restaurant. De eerste tequila die echt laat zien wat ‘terroir’ betekent in de wereld van agave dranken: bij het bottelen wordt meestal één veld tegelijk geoogst en verwerkt.
Wanneer de agaves rijp zijn, plukken de jimadores ze ’s morgens vroeg op de rancho. De piña’s worden vervolgens langzaam geroosterd in steenovens, in de open lucht gefermenteerd en tweemaal gedistilleerd in het hart van Los Altos de Jalisco, vlakbij het stadje Arandas.
Geen enkele botteling is hetzelfde.
Of je nu gewoon wilt genieten van een margarita of zin hebt om rancho’s en jaargangen te vergelijken: bij Tatemado zit je goed met Tequila Ocho.

Tequila Ocho is our house tequila and a house favourite. The first tequila to really showcase what terroir means in the world of agave spirits: a bottleing usually means one field gets harvested and processed at a time.
When the agaves are mature jimadores pick them in the early morning on the rancho, the piñas are then slow roasted in brick ovens, open air fermentation and double distilled in the heart of los altos de jalisco, near the town of Arandas.
No bottling is the same and whether you just want to enjoy a margarita or feel like comparing ranchos and vintages; tequila ocho has got you covered in Tatemado
