From the cellar: Henri Chauvet, Auvergne

Henri Chauvet started out as an insurance banker. He found a new and exciting venture in w**emaking. A road trip through the Auvergne convinced him that this overlooked region held extraordinary potential. In spring 2021 he settled in the village of Boudes, buying 10.5 hectares of vines on the steep hillsides of central France.

A newcomer, sure. But not a beginner. He trained alongside Thierry Allemand in Cornas, one of the great names of the Rhône.

The ground in Boudes is volcanic. Basalt and blue marl soils give his w**es a distinctive mineral character. Henri converted to organic farming right away and works naturally throughout: whole bunches, wild yeasts, ageing in steel or old oak, and bottling without fining or filtration. Still, he won't be boxed in. He describes himself as neither natural nor conventional, and decides on sulphur w**e by w**e, vintage by vintage.

The result? Pure, lively w**es with tension and a smoky edge. Production is small and demand is growing fast as word spreads, so grab it while you can!

Barolo Riserva "Cà d'Morissio," Monprivato by Giuseppe Mascarello

Monprivato is a monopole, meaning the Mascarello family owns the entire cru outright. That link goes back to 1904, when Mauro Mascarello's grandfather bought the vineyard. Four generations later, it's still theirs alone.

The estate itself dates to 1881, when Giuseppe Mascarello, after years managing vineyards for other landowners, finally bought his own. Mauro has been running the domaine since the late 1960s, taking over from his father, who took over from his father.

Cà d'Morissio is Mauro's tribute to his grandfather, Maurizio. In 1983 he started replanting a small section of Monprivato using a Nebbiolo clone his grandfather had originally planted back in 1921. Ten years later, once he felt the fruit was serious enough, he made the first vintage: 1993, bottled in 1999. It's produced only as a Riserva, only in the best years, and only from that one old-clone parcel.

This is Barolo people mention in the same breath as Conterno's Monfortino and Giacosa's red label: the very top of what the Langhe can do. Structured, patient, built to age for decades, and made by a family that never had a reason to leave the hill they started on.

Introducing The Kanon Winetable!

A private dining experience built around food, w**e, and good company. Long table, curated pairings, a cellar's worth of good bottles behind glass.

We've put together a few themes to get you started: Elegance, Italy vs Spain, Jura vs Burgundy, Pinot Noir Only, Ch*****ne Only, to name a few. Consider them a starting point, not a limit. Give us a quick idea, we'll take it from there.

Volnay Premier Cru Les Santenots, Benjamin Leroux.

A little quirk before anything else: Les Santenots actually sits in Meursault, not Volnay. But because it's planted with Pinot Noir instead of Chardonnay, the w**e is legally sold as Volnay Premier Cru. One of Burgundy's stranger and more charming rules: the grape decides the address.

Benjamin Leroux didn't come from a w**emaking family. He was born in Beaune in 1975, decided as a teenager this was what he wanted to do, and built a serious résumé fast: Cos d'Estournel in Bordeaux, Domaine Drouhin in Oregon, Louis Jadot, then Comte Armand in Pommard, where he became technical director at just 24. He stayed fifteen vintages.

It was at Comte Armand that he started experimenting with a small side project, buying grapes to vinify outside the estate. That taught him something important: you don't need to own the vineyard to make w**e that's honest to where it comes from, you just need to know the site and treat the fruit right. In 2007 he left to build his own négociant house in Beaune, and today his range runs the length of the Côte, from Chassagne-Montrachet to Gevrey-Chambertin.

This Volnay Les Santenots is exactly what he's known for: careful, precise w**emaking that lets a serious site speak without over-handling it. Silky, structured Pinot Noir from soil that technically belongs to Meursault's Chardonnay.

This crew is ready for a day out on our XL terrace.

We're joining forces with Anthony Snoeck from Janine's for a full day in the Belgian sun (fingers crossed): outdoor cooking non-stop, very fine food, and music by thang.

Come find us on the terrace. See you there.
