We’ve been rather quiet over the past few weeks.

Not because there’s nothing to say — quite the opposite.

We’re witnessing what feels like a major shift, and an acceleration, in what we call climate change.

There’s nothing fundamentally new here. It’s simply the increasingly tangible reality of what scientists have been telling us, over and over, for years.

So we took some time to reflect. To let it sink in. And to question where we, as an organization, should begin — and where we can actually make a difference.

Is running a restaurant the best way to showcase the value of preserving our soils, foraging locally, and growing food with greater respect for ecosystems?

Is serving plant-based food that is tasty, creative and healthy enough to open even a tiny door in people’s minds — and spark curiosity about why protecting biodiversity matters?

Are we reaching beyond those who already agree with us?

Or, sometimes, are we simply talking to ourselves?

We don’t pretend to have the answers. And we’d genuinely love to hear yours.

What makes you care? What makes you want to act? And where do you think change really begins?

In the meantime, here’s where our reflection has led us.

Maybe -
one of the simplest — and most joyful — ways to inspire climate action isn’t through fear, statistics, or guilt.

It’s by helping people reconnect with the beauty of the natural world around them.

𝐀 𝐧𝐞𝐰 𝐜𝐡𝐚𝐩𝐭𝐞𝐫 𝐛𝐞𝐠𝐢𝐧𝐬 𝐚𝐭 𝐄𝐧𝐭𝐫𝐨𝐩𝐲 💚

Every story has its seasons.

After an incredible journey, we are closing our doors as a restaurant. Our final service today marks the end of one chapter—but not the end of Entropy.

From now on, Entropy will continue as a place for private events, gatherings, celebrations, workshops, and unique culinary experiences reserved to residencies, 4 hands events, groups and corporate private dinners, while we are still open for candidates to take over the restaurant on the longer term.

It will also be on the road and hosting you in unexpected places like our farmers garden 🪴 and through residencies and catering events.

The values that have guided us from day one—regeneration, biodiversity, creativity, and meaningful hospitality—remain exactly the same.

To everyone who joined us around our table: thank you. You gave life to this house, inspired our team, and became part of our story.

As we often say, nature knows no waste. Everything transforms. This is simply our next transformation.

Bookings for the restaurant are now completely closed - but news of Entropy on the road and events will be regularly posted here on social media, on our website and through our newsletter (link in bio) .

We look forward to welcoming you again—just in a different way.

With gratitude,

The Entropy Team

LAST WEEK 💚🙏🏻

This Saturday, July 18th, we’ll be closing our doors after an incredibly busy and unforgettable trimester.

Back in April, we announced our decision to close the restaurant as you’ve known it.

👉 So many of you answered our call.

Over these past few weeks, we’ve been fully booked almost every day, and your support, kind words, and shared memories have meant more to us than we can express. They truly went straight to our hearts.

We made this decision to create space for new projects and to focus more on our personal lives.

This isn’t goodbye.

From September onwards, we’ll continue hosting corporate private events and offering external catering while we are still searching for the right fit taking over our space.

And who knows… maybe it’s finally time for the four-hands dinner experiences we’ve always dreamed of creating. ✨

Stay tuned—the story isn’t over yet. It’s simply entering a new chapter, more agile and respectful of our personal time. 💚

“When I became a vegan in 1987, in one fell swoop I extended my life expectancy and annoyed most of the people in my life—my mom most of all.” — Moby

It was an honour to welcome him and his team to Entropy—a pioneer whose commitment to veganism began long before it was fashionable, convenient, or widely understood.

For nearly four decades, he’s remained unwavering in his values, proving that lasting change is built through consistency, not conformity.

His words remind us that meaningful choices often come with resistance. Every movement that reshapes culture begins with people willing to question the status quo and live according to their convictions, even when it’s uncomfortable.

We’re deeply grateful that, during his time in Brussels, Moby chose to share a meal at Entropy. It feels especially meaningful because our restaurant was created from the same belief: that food can be a powerful expression of compassion, responsibility, and hope for a better future.

That it is the connection between people—and between all living beings—that truly matters, and ultimately gives meaning to everything we do.

Being a pioneer isn’t about being right before everyone else. It’s about staying true to your values long enough for the world to catch up.

Thank you, Moby, for inspiring generations to lead with integrity—and for choosing to spend an evening with us, our dog Volt included.

Here’s to everyone who keeps choosing their values, one plate, one conversation, and sometimes… one stick at a time.
