Texel saddle of lamb, served nose to tail.
BÚN red curry, slow bbq roasted and worked into a creamy coconut sauce and rich lamb jus.

Served with steamed Shanghai paksoy, spiced BBQ rice, and a herb salad with cải choy.
On the side: a lamb sausage made from the remaining cuts of the saddle. ♨️
