King crab, potato & tandoori — two preparations, one beautifully layered dish.
A delicate tartelette filled with king crab, tandoori and peanuts, topped with plum carpaccio and corn flowers. Alongside, a crisp potato shell holds king crab, soybeans and spring onion, finished with potato and tandoori espuma, tonkatsu jus enriched with crab bisque, and a fragrant blend of tandoori, Espelette pepper and vadouvan.

A little bit of everything in one bite.

Sweet Norwegian langoustine, crispy kimchi crunch, fried pork skin, and fresh lime. Served over creamy and pickled cauliflower, then finished with a warm umami broth and a light kaffir lime & vermouth foam.

Comforting, fresh, and packed with flavour.

Langoustine, done the Nathan way.

One of those dishes you remember after the last bite.
