Belgian food and drinks were often overshadowed by powerhouse neighbor France. Now you can discovering what has been called the best-kept culinary secret in Europe. Did you know that Belgium has more Michelin starred restaurants per capita than France? Belgium has the most gastronomically intriguing beers of any nation in the world, and the most highly evolved and elaborated "cuisine a la biere".

Many beers are crafted by small artisanal brewers whose family recipes and techniques go back generations. Beer laces the national dish, Carbonnades Flamandes, a Flemish beef stew. Before the independence in 1830, Belgian regions had been part of the Celtic, Roman, Spanish, Austrian, French, Dutch, and German empires. Belgium's central location has meant that it has long been a trade center for food products. This land has become a meeting point for the Germanic cultures of Northern Europe and the Latin cultures of the South, and this has influenced their cuisine. Today, Brussels is the European Union administrative center and a cosmopolitan dining destination. You will learn about the ingredients, techniques, and unique beer dishes that Belgium gives to the world.

Beer-cocktail of the month !!!

Bitter, sour, spicy, sweet and smokey — Smokin’ Hops was designed for those of us that like to live life on the edge.

Mezcal fills the mouth and nose with hints of smoke, while fresh serrano chiles tingle the tongue. The mouth slightly puckers from the combination of fresh lemon and hop bitterness. And then all is calmed by the crisp and refreshing carbonation of the beer.

Smoky and bitter with a hint of heat and slight tartness, this cocktail is both warming and refreshing. It will warm you up in the winter, and add a little kick to your routine in the summer. Smokin’ Hops is a perfect match for anything off the grill — especially smoked meats.

And beware, this drink will bite you.

Smokin’ Hops

Ingredients

1 oz. Mezcal
1 oz. lemon juice
1/4 oz. minced Serrano chiles*
1/2 oz. agave nectar
3 oz. West Coast IPA
Instructions

In a shaker glass, muddle the serranos with the simple syrup. Add mezcal, lemon juice and ice. Shake and strain into a Collins glass over ice. Top with IPA. Garnish with lemon peel.

*For less heat, substitute with a few dashes of your favorite hot sauce

Where the hell I buy moose meat in Belgium ?????

Alaskan Amber Moose Stew

Ingredients
¼ cup vegetable oil
2 ½ pounds moose meat (1 inch chunks)
1 ½ pounds onion, sliced
1 tablespoon unsalted butter
2 teaspoons sugar
2 tablespoons flour
1 ½ teaspoons thyme
3 carrots, sliced
12 oz Alaskan Amber Ale
1 cup beef broth
1 tablespoon tomato paste
Salt and pepper

Warm oil over high heat until hot, but not smoking. Brown meat in batches on all sides. Transfer to a plate.

Add onion and butter to pan. Cook till soft, about 5 minutes. Reduce heat to medium and sprinkle in sugar. Cook until golden, about 15 minutes, stirring occasionally.
Add flour, thyme, carrots and cook on high, stirring for one minute. Pour in beer and bring to a vigorous boil. Stir in broth and tomato paste and return to boil.

Return meat and juices to pot and bring to just a boil and reduce heat to low, cover, simmer until meat is tender and sauce is slightly thickened, about 1 ½ hours. Season with salt and pepper.
