Summer is served. A menu that celebrates the season, where New Italian cuisine and Sergio Herman’s Zeeland heritage come together. Begin with a Zeeland Creuse oyster with passion fruit, beurre blanc and chili, and a tartlet with pecorino cream, fig and crispy chicken skin. Continue with sea bass, green apple and elderflower, Zeeland mussels with ‘nduja, radicchio and verbena, fresh pasta with squid, guanciale and barilotto, and farmhouse chicken with girolles, Prosciutto di Parma and caviar.
