A fantastic night was had in the Rum Vault as Master Distiller Richard Seale hosted our Gourmet Safari Storied Rum Dinner. While dining on an exquisite four-course dinner with rum pairings, Richard regaled all with the history of his award-winning rum, ending the night with one of the brand’s newest additions, Doorly’s 14.

Drumroll please 🥁Introducing, bajaneats! Bajan is pronounced just like Asian, and is a word used to describe Barbadian’s dialect and culture. Sam and I have moved down here for my new job, and we’re excited to explore!
Last night we did one of the coolest things I’ve ever done in my life, which was the 3 course (plus chocolate pairing) rum dinner at .
You’re guided into a small room and surrounded by 190+ bottles of some of the rarest and most hard to find rums in the world, free for you to peruse. Our server/in vault bartender Corey was extremely knowledgeable about all of the rums and walked us through every course.
The rum and chocolate pairing was of course last, but it was my favorite part 😊
For my first course I chose pork tenderloin served on a smoked golden apple chutney, and paired with a spiced sorrel rum sour. If you guys have not tried rum in your drinks, please do me a favor and try it!
Next course was the char grilled filet of beef, served with parsnips, glazed sweetbread, and au jus. The meat was very flavorful and tender, but the sweetbread was unlike anything I’ve ever tried. It was a little cooked lamb pâté wrapped in bacon, and I’m definitely going to have to have it again. This was paired with a drink called the Lucky Lucy, which had fresh basil and cloves and reminded me of Christmas. .
Pre-chocolate pairing was the dessert course, which had a homemade honey-vanilla ice cream, warm banana bread and butter pudding, and rum sauce. You can tell that they use fresh bananas straight from the island, because I’m not normally a fan but these were on a whole other level. This course did not have a rum pairing, but they gave us a cocktail before dinner that I didn’t get a photo of to make up for it.
All in all a lovely experience, and I’d recommend it to anyone who’s looking for a nice night out. And as they say in the rum vault, drink more rum! @ Colony Club by Elegant Hotels
