"Uncle John"
Many of you may have seen the knife hanging up at the entrance of our little restaurant and may have wondered what the story is behind it, well here it is.
When I started my apprenticeship, my Uncle, John Kearney who was a Chef gave me this knife. He had the same one and swore by it. I used it a lot during my training and even when I got my black buttons (apprentice usually wears white buttons, black buttons for qualified Chefs). Unfortunately Uncle John passed away at 38 so I retired the knife to home use only. Loren and I used it to cut our wedding cake and was a favourite at home. One day when making a birthday cake for our youngest daughter it was on the kitchen bench and was accidentally knocked off and broke in half. The knife which has been named Uncle John sat wrapped in a tea towel in the knife draw for a long time. That is until one day Loren decided to have it framed for me and now it is proudly on display. My first day in this restaurant, the knife proudly on display and then on the radio played "You'll never walk alone" (and yes the same song at Liverpool football matches) this song was played at my Uncles funeral. From that time on I knew this would be a great decision.
Here is to Family and Friends
