🔥 Behind the Making: Tofu On Tofu Don

We start with crispy fried tofu layered over steamed rice and glazed with our rich teriyaki sauce. A light tofu foam adds creaminess, while crispy gyoza skin furikake brings texture and umami. Finished with a sprinkle of fresh spring onion, this bowl is dairy-free, vegan, and gluten-free — proving plant-based can be just as indulgent and beautiful.

At Uncle Don, every bowl is crafted with intention. From the carefully torched salmon to the Patagonian prawns tossed in yuzu kosho butter, each ingredient is chosen not only for flavour but for its visual harmony. Crispy onions add texture, ikura pearls glisten like jewels, and fresh chives provide a pop of colour.

We start with Patagonian red prawns, stir-frying them in a fragrant yuzu kosho butter to bring out their natural sweetness. Then, we add a sprinkle of crispy onions for crunch, a touch of ikura for bursts of umami, and finish with fresh chives for brightness. Every element comes together for a Donburi that’s as beautiful as it is flavorful.
