We're growing the team and looking for people who genuinely love hospitality.

For interested peeps who are new to Kuzu, we are a Japanese izakaya: considered share plates, a strong w**e and sake program, and a dining room that draws people from across the Macedon Ranges and up from Melbourne. It's an intimate venue with a tight, passionate team that takes the food and the guest experience seriously.

Both positions are casual or part-time, 1–3 shifts per week, run by a team that cares about their locals, the craft, and each other.

Kitchen applicants: for this round we're looking for kitchen team members with an interest in cooking, and aren't currently hiring for junior kitchen hand or dishwashing roles. Experience preferred but not essential.

Shimesaba is one of Japan's oldest preparation traditions: mackerel cured in salt, then vinegar, the acid doing the work that heat does elsewhere.

This version layers smoking onto that before pressing the fish into oshi sushi, the block-style that predates the hand-formed nigiri most people know. Each piece arrives with rice beneath smoked vinegared mackerel, finished with shiso, sesame, red onion, chive and a smoked soy dipping sauce.

Barbera is Italy's everyday red, the grape that sits on the table through long dinners in Piedmont, high in acid, low on tannin, built to match whatever comes out of the kitchen.

Vinea Marson brings it to Heathcote's Cambrian soils, where Mario Marson has spent years making the case for Italian varietals in central Victoria.

The 2024 is a picture-perfect vintage: carbonic maceration lifts wild raspberry and brambly fruit on the nose, while the palate runs bright and generous through to the finish. It's on the pour at Kuzu now. Barbera's natural acidity and a Japanese menu were always going to get along.

Several sizes and varieties are available to pre-order for Wednesday – Saturday pick up.

*Please note that due to the daily fresh supply from the market, some sashimi and nigiri options may not be available and could be substituted with other similar items with the same price on the day.

Tempura unagi sushi, new on the menu. The whole roll goes through the fryer in tempura batter: eel, cucumber and tobiko inside, finished with spring onion, red pickled ginger, teriyaki sauce, mayo and sansho pepper. Crispy outside, tender eel within, and a tingle of sansho at the end.
