New Single Origin! Colombia - Diofanor Ruiz Tabi Natural

Our latest single origin comes from Diofanor Ruiz’s La Divisa farm in Buenavista, Quindío, where volcanic soils and high elevation provide the ideal conditions for expressive, fruit-driven coffees.

Produced entirely from Tabi, a variety developed by Colombia’s National Coffee Federation, this coffee represents a balance of tradition and innovation. A cross between Bourbon, Typica and Timor Hybrid, Tabi was bred to preserve exceptional cup quality while improving resilience and sustainability for producers.

Naturally processed following 45 hours of aerobic fermentation, the cup is vibrant and structured, with notes of raspberry, passionfruit and black cherry, finishing with rich dark chocolate.
