Some drinks just look like the time of day they're made for, and the Aperol Spritz might be the best example going.

That deep orange glow could pass for a winter sunset over Warwick, which makes it the obvious choice for Drinks on Dusk.

Aperol, sparkling wine, a splash of soda, served right as the light starts to fade.

We’ve partnered with Dave at DoughJoe Bakers to serve a sourdough that’s given the time it deserves—slowly proofed and baked for a truly rustic, crackling crust.

Tear it open, add Chef's selection of dips and true oil, and that's just the beginning of what's new on the menu this winter.

As the sun dips, Drinks at Dusk at Rupert’s is calling — daily from 5–6pm, settle into the lounge, order something delicious, and let the evening do its thing.

A massive thank you to everyone who joined us at Rupert's this weekend. It was a huge weekend at Morgan Park for the Australian Superbike Championship and it was an absolute pleasure hosting you and hearing all your stories from the track.

Huge congratulations to everyone who took part and raced this weekend. You brought an unbeatable vibe to the Southern Downs.

We've LOVED our autumn desserts and we're a little sad to see them go.

The Luscious Chocolate and Macadamia Brownie with black cherry compote and vanilla bean cream. The Lemon Myrtle and Coconut Drizzle Cake with native lemon myrtle sugar syrup and vanilla bean ice cream.

If you loved them, you best be booking in before we turn the page.

Coming with our winter additions: a Spiced Red Wine Poached Pear, slow-poached until it's deep, glossy and tender, served with whipped mascarpone and a crunchy praline.

Four hours of patience on a plate. The kind of dish you order, then secretly hope no one at the table asks to share.

As the Southern Downs evenings turn crisp, our kitchen is embracing the season of lingering warmth. There is a distinct comfort in food that refuses to be rushed, and our Red Wine Braised Beef Cheek Ragu is a perfect testament to that.

Slow-braised until it yields perfectly to a fork, folded through thick ribbons of pappardelle, and finished with rich butter, aged parmesan, and a scattering of fresh herbs. It’s not just a meal—it’s an excuse to settle in, pour another glass of red, and let the evening unfold unhurried.
