Tim originally starting in coffee to just have a job but soon discovered that his passion for coffee and the humble bean began to interest him in ways he never thought possible. Enter the State, National and International Barista competitions. I entered my first competition to learn more and to network w

ithin the industry. In 2009 I fulfilled my first dream in the industry – to win the AASCA Qld Barista Championship. From here I moved into the National competition and was named the AASCA 2009 Australian Barista Champion. Each year the Australian champion represents the nation at the World Barista Championship where I placed 13th in the world. The role of an Australian Barista Champion is something I am very proud of and feel it is my responsibility to represent the specialty coffee industry as an ambassador and a leader. To keep my hand in and stay focused on building my skills as a Barista I defended my title to become the 2010 Qld Champion. This has allowed me to take my career to the next level to become a business owner and launch my own brand of specialty coffee. Tim Adams Specialty Coffee includes retail and wholesale coffee, training and consultation. Tim Adams Specialty Coffee launched with the Season One Blend in June 2010.

If you’ve been enjoying this incredible Geisha from Finca Plan Del Hoyo, you’ve been one of the lucky ones! ✨

This coffee has absolutely flown off the shelves, but don’t worry, coffee friends we’ll be featuring Francisco’s SL28 very soon.

After spending time with Francisco earlier this year, it’s a privilege to share coffees from such a dedicated producer. Through hard work, innovation, and a deep respect for the legacy of his family’s land, he continues to elevate what is possible at Finca Plan Del Hoyo.

With the ongoing guidance and support of Unex, the farm continues to thrive year after year, producing coffees that truly reflect the care and commitment behind them.

We’ll be seeing much more from Francisco in the future, and honestly, we can’t wait!

Xavantes Lake is one of the components of Tortoise & the Hare. Made up of 3 farms from the Paraná Region, there’s no doubt this coffee does the heavy lifting in this blend. Brining a big textural element and loads of chocolate sourced for us by our dear friend and long term partner Luiz Rodrigues of California Coffees.

On the ground at Finca La Cruz with Freddy 🇭🇳☕️

Here, cherries are carefully selected by Brix level, then processed using extended anaerobic fermentation with mosto to build sweetness and complexity. Freddy’s hands on approach shows how small processing decisions can have a big impact in the cup. His knowledge blew us away, this level of care is something truly admirable.

It’s that time of year again… origin trip season.

We’re excited to be heading off soon on our first sourcing trip for 2026.

This time of year is incredibly important, not just for us at Tim Adams Specialty Coffee, but for the producers we work with, our wholesale partners and the customers who enjoy our coffee in their cup.

Spending time at origin allows us to strengthen relationships, better understand each harvest, and work closely with producers to continue delivering the highest quality coffee possible.

Follow along as Tim travels with the team at Project Origin, sharing moments from origin and introducing the incredible people behind the coffee.
