Fun with Kids! 4 and 2 years old boys came to Yumi's kitchen with their mother and grandma, cooked Chirashi sushi, Temari sushi (Sushi Ball) and Inari sushi (Sushi in a thin tofu skin pocket). Kids helped with crashing nori (seaweed) sheets into pieces, cut carrot to flower shape, cut nori sheet to music note shape and cooling down sushi rice with fan. Introduced one bite size of temari sushi and inari sushi for kids! Very busy lesson, so not many photos, unfortunately...

Yesterday, nice young gentleman came to Yumi's kitchen for the basic class. He said he is a beginner to cooking, but the way he hold ingredient and knife is perfect! The dashi from kelp and bonito flake had golden color and so beautiful. Miso soup and oyako don cooked with the dashi was, of course, yummy! He finished two sets of the meals!

The 5th lesson for the lovely couple was Ramen and the 6th lesson was Nabe (hot pot) with beautiful marble Wagyu beef - Shabu shabu. We made sesame shabu shabu sauce and compared to the ready made one. Of course, the home made sauce was much nicer! As a second meal, we cooked porridge with the soup from Nabe. The last lesson was Okonomiyaki and Yakisoba (fried noodle). We drew a pattern on Okonomiyaki. Also we wrapped Yakisoba with egg crepe-Omusoba. I showed how to change spaghetti to egg noodle and they really like the result and impressed :)
I really enjoyed the lesson with them and appreciate the card and the present. Since I enjoyed the lesson so much, I always forgot to take photos.... No nabe picture, etc... lol.

Tonkatsu and Katsudon lesson. The cabbage for Tonkatsu need to be very thinly sliced and Ms. was very good at cutting cabbages! Mr. is expert of rice cooked with sauce pan, not with a rice cooker! This time we did shallow fry and non fried method and compared loin and fillet. I think they impressed with non fried method. I am so lucky having all these good customers. By the way, the Tonkatsu image is up side down...lol.

Yesterday, a lovely young couple came to Yumi's kitchen to make Futomaki (traditional sushi roll) Cooked rice with a normal pan, mix the sushi seasoning, cooked unique ingredients, such as kanpyo and denbu. The gentleman was good at cutting ingredients and the lady was good at making Tamagoyaki (Japanese style omelet). Also she was very good at rolling sushi as well - beautiful result! They walked down to the Balmoral beach after the lesson. Hope they enjoyed the lesson and the walking :)

Last Friday, we cooked Tonkatsu with traditional deep fry method and with non fry method. And cooked Katsu-don using cooked Tonkatsu. Also introduced several sauces go well to Tonkatsu. He seems fall in love with the sauces :) I thought his wife would be eating as well so brought the ingredients enough for 2 people, but she wasn't there... He ended up with a huge tummy :)

Young brothers came to Yumi's kitchen yesterday for the basic lesson, explanation of dashi, miso, mirin, cooking sake, and cooked miso soup and oyakodon. Also yumi showed how to cut ingredients and they did many practices - a lot of chopped spring onion, onion and a few piece of chicken! (I used them into my curry last night) For miso soup, the ingredients are Abura-age (fried thin tofu) and Wakame (seaweed) with white miso, and even the Abura-age and Wakame went into my curry. lol. Thank you for boys to come to my kitchen. Keep practicing!

Yumi visited to nice gentleman's beautiful kitchen twice in June! The first lesson was chicken karaage, salty flavor and chicken namban (fried chicken with special sour sauce and tartar). The gentleman was very impressed with the chicken namban! The second lesson was ankake ramen, that is his special request. He used to have this ramen in a ramen restaurant that is no longer exist. I created the recipe just looking at the image from someone's blog, and he was very satisfied with the result! Yeah! Now this is my new lesson in the noodle section. (Thank you, Mr.F!) Right after we cooked meals, Louie the doggie came to me and said "where is mine?" I promised to bring a treat for him next time. (The food images are from my photo collection, because I keep forgetting to take photos...)

A nice couple came to Yumi's kitchen 3 times in June! The first lesson was Basic class that I explain about Dashi, Miso, Mirin, cooking sake, and cook Oyakodon (chicken & egg on rice) and miso soup. I created this lesson for the other couple in early this year and it's getting popular! (Thank you, Mr. C!) The second lesson was Tofu, tasting 3 different type of Tofu and cooked Hiyayakko (cold tofu), Yudofu (hot tofu) and Agedashi tofu. The third one was Tempura, which need a bit of technique, but it was successful :)

A month ago, one lovely artist came to Yumi's kitchen. She has been to Japan and loves Japanese food and culture a lot. She was so keen to learn a lot of things and made many many questions. I love talking with someone who has interested in Japan and I love explaining and sharing my knowledge with them. The main topic was Tofu, explaining and tasting 3 different types, and she loves Hiyayakko with variety of toppings. She is busy so she loves easy and quick meals. I also like 3 minutes cooking, I thought I should create a class "Japanese for busy people" lol

Another great fun cooking class! Niice lady and her friend came to my kitchen to cook Oyako-don. Cooked rice with normal sauce pan and chopping ingredients, beat eggs, explanation of "dashi" etc. etc., I tried to explain using numbers as much as possible, because he is an accountant and good at by the numbers, and it was fun! Again, I enjoyed the class sooooo much and hope they did too. Finally, we found we used to work in the same company and same project! What a small world!
