There’s something special about a tray of freshly baked fish on a chilly evening 🥰
Our Orange Roughy is layered over golden potatoes and baked in a rich Balkan-style ajvar sauce with garlic, cherry tomatoes and lemon, creating the perfect combination of warmth and flavour. 🐟🍋
Simple to make and guaranteed to warm you up this winter

Ingredients
• 650g Catalano's Seafood Orange Roughy fillets
• 650g potatoes, thinly sliced
• 160g ajvar
• 120g cherry tomatoes, halved
• 4 garlic cloves, minced
• 1 lemon (juice, zest & wedges)
• 120ml vegetable stock or water
• 3 tbsp olive oil
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp sweet paprika
• ½ tsp smoked paprika
• ½ cup fresh parsley, chopped
1️⃣ Prepare the potatoes
Preheat oven to 210°C. Toss potatoes with 1 tbsp olive oil, half the salt, pepper and half the stock. Arrange in a baking dish and bake for 20 minutes.

In a bowl, combine ajvar (you can easily find it at Coles) remaining olive oil, garlic, cherry tomatoes, paprika, lemon zest, lemon juice and remaining stock

Pat the Orange Roughy fillets dry and season with the remaining salt. Place over the potatoes and spoon the ajvar mixture generously over the fish.

Reduce oven to 200°C and bake for 15 minutes, or until the fish flakes easily and the potatoes are tender.
5️⃣
Rest for 5 minutes. Finish with fresh parsley, a drizzle of olive oil and lemon wedges.
