Crepes are paper thin pancakes which can be filled with savoury or sweet fillings. Traditionally, crepes were first invented in Brittany a northwest region of France, where the Bretons used buckwheat flour to make their crepes called gallettes. Today crepes are renowned throughout Europe and synonymous with Paris, are its Parisian creperies. The most famous of crepes, Crepe Suzette is said to have

been invented by mistake in 1891 at the Café de Paris in Monte Carlo by a 14 year old assistant waiter Henri Carpentier. He was preparing a dessert for the Prince of Wales, the future King Edward VII of England and his companion whose name was Suzette.
