Brisket, Ribs, salt/pepper/paprika, snake method with heat beads, cherry wood (allow fuel to get up to ambient temp appox 120’c without wood, then introduce wood until approx 65’c internal temp then allow the heat only to finish) aim to be 120’c ambient consistently. Pull at internal 93’c-97’c.

Trimmed brisket before start and placed trimmings in slow cooker to render down and re-introduce before resting

Didn’t bother with wrapping this time.
