Kaiza Izakaya makes its mark on the bustling eating precinct of Enmore Rd. The restaurant is opened by Chef Jason Nguyen of Sokyo and Chukka fame. From watching his Dad cook traditional Vietnamese dishes and his Japanese culinary education, he has envisioned a way to marry the two cuisines together. His skills and cultural understanding of the South East are unparalleled, with this, Kaiza Izakaya was born. The kitchen is a replica of a traditional South East Asian family home, lined with the smoking hot binchotan charcoal grill and piping hot woks. Kaiza is your home away from home, enjoy with friends and family, solo or for your next special occasion.

Sometimes the story behind the plate is best told tableside.

Dining at Kaiza goes beyond ordering from a menu. Chef Jason’s Vietnamese heritage, Japanese kitchen experience, and approach to ingredients all have a story, and moments like these give guests a closer connection to what they’re eating and why it was created.

At some point, spelling becomes the kitchen’s problem.

The order makes perfect sense to me, and honestly, that should be enough information to work with.

Fire is part of the process, but control makes the difference.

Prawns meet the heat of the grill in the Kaiza kitchen, where timing matters when bringing out their natural sweetness while keeping their texture just right. It’s one of the many moments happening behind the scenes before a dish reaches the dining room.

Kaiza is closed today. Join us when the kitchen fires up for service again on Wednesday.

At Kaiza, the table is meant to feel full.

Crispy Eggplant, Chicken Karaage, oysters and more arrive as part of a dining style centred around sharing, conversation, and discovering different flavours together. It draws on the communal nature of Vietnamese dining alongside the detail and consideration found throughout Japanese cuisine.

For World Mental Health Day, spend some time connecting over good food and good company at Kaiza.

One last toast to the Spring Holidays.

Our Clarified Matcha Pandan Cocktail brings two distinctly Asian flavours into the glass, pairing the character of matcha with the fragrant notes of pandan in a polished Kaiza pour.

The artist and one of his expressions.

For Kaiza’s head chef Jason, Mix Sashimi is an example of knowing when to let the ingredient speak. Clean cuts and careful handling put the quality of the seafood first, reflecting the restraint and precision he developed through years in Japanese kitchens.

Every Kaiza experience has to start somewhere.

Midweek comfort, the Kaiza way.

Prawn Tempura Udon brings crisp prawns and comforting noodles together in a dish grounded in Japanese tradition. It’s the kind of bowl that suits a relaxed Wednesday dinner while showing the more comforting side of the Kaiza menu.

Settle in with Prawn Tempura Udon at Kaiza.

The brief said to film the best thing at Kaiza, so naturally we turned the camera around.

The kitchen might have something to say about that, but the confidence is already there.

Just another day behind the scenes at Kaiza.
