Coffee enthusiasts will recognise this setup as a process called ‘cupping’, a standardised tasting method to evaluate the aromas and flavours of coffee roasted differently.

Cupping reveals the ideal roasting timeline and temperature curves which bring out the best sweetness, acidity and body. Roasters pick their favourite and roast accordingly, ensuring consistent, high quality coffee - a beautiful mix of science and instinct!
