Having the kitchen right in the middle of the dining room allows the chef’s to really enjoy watching people eat their food…

Did you know that every day we offer our oysters 1/2 priced from five pm till six. It’s to encourage our guests to come in a tiny bit earlier than their usual dinner time and treat themselves to a little treat.

Vino bianco or Rosso - our list is all Italian because of course Italians do it best, everyone knows this is true.

Pasta is always handmade - and changes very frequently. This week we have made a delicious spiced cuttlefish dish. Bello!!!

For those guests looking for something a little special - our wine list includes some of the great wines from Italy.

Finish your meal with a small digestive from our little trolley we have stocked it some of the most amazing artisan distilleries in Italy… and a little smattering of great whiskey.

Winter light comes streaming in the room - we love this window and the little jewel box of a restaurant that it creates. Come visit us soon.

A little photo shoot of our morning bread making ritual at Bau Bau, it’s just a few simple steps and some very tasty focaccia is the end result. A huge part is the delicious Laucke Flour Mills euro flour and the huge amounts of Mount Zero - Australian Olive Oil, Olives & Produce olive oil we splash the dough around in. Two excellent local producers we are so very grateful to each morning.

There is something deeply satisfying about a budino al caramello.

Not quite a crème caramel, not quite a custard, but something softer, darker, more Italian in spirit — milk, eggs, sugar and patience, finished with the bitter snap of burnt caramel.

Ours comes from the kitchen, gently scorched on top, the spoon falling through it almost before you ask.

Bau Bau - new hands in the kitchen…

Dan left the building a few weeks ago, and we all want to thank him for six years of working so closely with us, both at Donna Maria and at Bau Bau. It’s almost impossible to imagine that it has been six years. We wish him all the best, hope he’s enjoying a well-earned break with his family, and of course we’re excited to see what he does next.

Over the past few weeks, Matt — who started the much-loved Bistro Elba and the hatted Patsy’s — has quietly taken over the creative direction of the Bau Bau menu - he has been working in the kitchen several day a week for the past six months - so many of you will be familiar with his presence already.

The response to what’s been on the plate has already been wonderful. Matt is extremely excited to work more closely with the kitchen team as they continue to refine the menu and the restaurant: more from the gardeners at the farm in Rocklyn, a deeper exploration of regional Italian cooking, and a closer connection between the food we serve and the wines grown across Italy - his great love affair is with ( if you him know you know he loves that Manna white)

There are new dishes beginning to appear, familiar ideas being sharpened, and plenty more to come.

Salsa rafano — or cren — is Venice’s sharp, bracing horseradish sauce, used across the Veneto to bring heat and freshness.

This week, we’re serving it with trout. The fish is delicate and sweet, while the rafano brings a fresh, sharp kick. Simple Venetian flavours, perfect for the season.

Shout out to capers for these delicious leaves they are the little salty delights that bring the whole thing together.

Hand made pasta at bau bau is one part of our daily routine- while the focaccia is rising in a warm place we spend time rolling the dough and cutting it by hand. It’s all part of our goal to serve some of the most delicious Italian food you have eaten.
