Every bean gets his tick of approval before it makes its way into your cup. It's a tough job being this picky... but someone has to do it.

A quick home tip while we're talking quality: your grinder matters more than your machine. A consistent grind does more for your cup than almost anything else, pre-ground coffee goes stale fast, so grinding fresh right before brewing is one of the cheapest upgrades you can make.

Here's why it matters, coffee starts losing flavour within weeks of roasting. Most supermarket bags don't even show a roast date, just a "best before" that can be 12+ months out.

Look for a roast date, buy little and often, and store beans in an airtight container away from light and heat (not the freezer for daily use). Fresher beans, better cup, less money over time.

His most-asked question? "Why doesn't my home coffee taste like the café?" Usually it comes down to three things: grind size, water temperature (aim for 90–96°C, not boiling), and freshness of the beans.

Compare that to $5+ at a café and you're saving over $1,000 a year if you drink one coffee a day. The secret to café-quality at home? Beans roasted on-site and used within 2–4 weeks of roasting, that's when flavour peaks.

Older supermarket beans have often been sitting for months. Fresh roasting = better aroma, better crema, better coffee in every cup.
