餃子 (Gyoza)

From ancient hands to Westgarth dining,
from one culture into another,
still warm, still shared.

“古を” (from ancient times), a nod to its origin in China, where dumplings were first made not just as food, but as medicine, ritual, and family craft. Gyoza carried through migration, war, and history.

“いまここに餃子の” (now, here, gyoza…)—a shift in time and place, anchoring the past into the present. Post-war adaptation, street stalls, izakayas, home kitchens. The dumpling has changed—thinner skin, more garlic, pan-fried crispness—but its soul remains intact.

“香りかな” (ah, the fragrance…)
This is the emotional center, scent is memory. The smell of gyoza isn’t just appetizing—it evokes gatherings, late nights, shared plates, laughter, and familiarity.

“皮旨く餡は絶妙に” (the skin is delicious, the filling exquisitely balanced), grounds everything back into the physical experience. It’s humble, almost conversational. After all the history and poetry, it reminds us: culture lives in the bite. The crisp bottom, the juicy interior—It’s about transformation without loss.
