{Mushroom Skewers}



Get ready to kick off an amazing weekend with this mouthwatering BBQ sensation - Caramelised Balsamic Mushroom Skewers ...Fun to make & super delicious 😃⁠

⁠INGREDIENTS⁠
1/2 Kilo button mushrooms (large as possible)⁠
2 x Tablespoons Morella Grove Caramelised Balsamic Vinegar⁠
1 x Tablespoon soy sauce or tamari⁠
3 x cloves of garlic finely chopped/minced⁠
A Drizzle of Morella Grove EVOO⁠
Salt & pepper to taste ⁠
Chopped flat leaf parsley for garnish⁠
1/2 lemon ( for finishing )⁠
⁠
METHOD ⁠
1. Slice mushrooms approx. 1cm thick or thick enough to pass through skewers.⁠
2. Marinate sliced mushrooms in above ingredients for 30 mins.⁠
3. Thread mushrooms from the base onto skewers 3-4 per skewer⁠
4. Grill over medium heat until just tender & slightly charred 2-3 mins. ⁠
5. Serve on a platter & garnish with flat leaf parsley and a squeeze of lemon⁠

Ingredients (3 persons)

• Butter
• Sugar
• Rosemary
• Cinnamon

Directions
🍏 1. Heat the oven to 150°C. 4. Put the baking dish in the oven for ca one hour, or until the apples are completely soft.

🍎 2. Remove the core from the apple with a corer. Put the apples in a baking dish.

🍏 3. Fill the apple with butter and sprinkle the sugar over the apples.

Add the rosemary and finally grate the cinnamon over the apples.
For serving Serve the apple with the sugar-butter-rosmary sauce that is the
bottom of the baking dish

Almond Olive Oil Christmas {in July}Cake

INGREDIENTS

4 EGGS
½ CUP (110G) RAW CASTER (SUPERFINE) SUGAR
½ CUP (125ML) MORELLA GROVE EXTRA VIRGIN OLIVE OIL
Âź CUP (60ML) LEMON JUICE
3 CUPS (360G) ALMOND MEAL (GROUND ALMONDS)
1 TEASPOON BAKING POWDER, SIFTED
1 TEASPOON GROUND CINNAMON
⅓ CUP (70G) BLANCHED ALMONDS
BRANDY SYRUP
½ CUP (125ML) BRANDY
½ CUP HONEY
1 TEASPOON GROUND CINNAMON
1 TEASPOON VANILLA EXTRACT

METHOD
Preheat oven to 160°C (325°F). Place the eggs and sugar in the bowl of an electric mixer and beat for 6 minutes, or until light and fluffy. Add the olive oil and lemon juice and beat to combine. Add the almond meal, baking powder and cinnamon and fold to combine.
Pour the mixture into a greased 22cm round springform tin lined with non-stick baking paper. Place the almonds on top and cook for 50 minutes, or until cooked when tested with a skewer. Set aside to cool slightly, before turning out onto a wire rack.
Place the honey, cinnamon and vanilla in a small saucepan over medium heat, bring to the boil and cook for 5 minutes or until thickened. Add the brandy and cook for 2 minutes, or until syrupy and reduced by half. Pour the syrup over the warm cake and serve.

{pasta night} maybe a glass of red wine night so let's keep it simple.
~
* Grab your favourite shell pasta, a suitable Friday beverage and lets cook.
~
INGREDIENTS you will need;

4 tbs Morella Grove Olive Oil
1/4 cup (75g) baby capers in salt, rinsed, drained
185grams Pancetta (or bacon ) this is a rough guide you can add or subtract.
1 x tbs Morella Grove Chilli Relish
2 x cloves garlic finely chopped/minced
Finely grated zest and juice of 1 lemon
1 x handful of loosely chopped flat leaf parsley

METHOD
1. Cook pasta in a saucepan of boiling salted water according to packet instructions. Drain, reserving 1/2 cup (125ml) cooking liquid.

2. When pasta is almost ready, heat 2 tbs oil in a large frypan over high heat. Carefully add rinsed baby capers and fry for 2-3 minutes until golden and crisp. Remove with a slotted spoon and drain on paper towel.

3. Return frypan to medium heat and add remaining 2 tbs olive oil. Add the garlic, stirring for 2 minutes or until softened then gently remove with slotted spoon and add in the chopped pancetta or bacon, cook till golden and add 1 x tbs Morella Grove Chilli Relish, lemon juice ,zest and cooked garlic.

4. Reduce heat, add the cooked pasta shells, tossing them gently in the glistening sauce. Finally, add the fried capers and chopped parsley, a quick little toss and your done.

Season with black pepper and serve

The perfect side dish for any roast or festive table.

Golden Roasted Garlic & Thyme Potatoes ⁠

⁠YUM.... We like to be a little more liberal with our EVO but for those who like to follow recipes this one is for you :)⁠
⁠~
Ingredients:⁠
⁠
50ml Morella Grove EVOO⁠
2 crushed garlic cloves⁠
1 tbsp thyme sprigs⁠
1/2 cup (125ml) chicken stock⁠
Method:⁠
Step 1⁠
Slice potatoes very thinly. Mix with EVOO, garlic cloves and⁠
thyme sprigs in a bowl. Season.⁠
Step 2⁠
Arrange potato slices upright in a 4-cup (1L) shallow dish.⁠
Pour chicken stock down the sides of the dish.⁠
Step 3⁠
Roast at 180C for 40 mins or until potato is golden brown and⁠
tender.⁠

Sweet Foodie Love Inspo

Needing some inspiration for desserts? Try my chocolate mousse with a dash of rum this year (Best made the day before)⁠

Serves 6⁠
⁠~
175g/6oz dark chocolate, chopped⁠
110g/4oz butter, cut into cubes⁠
3 large free range eggs, separated ⁠
2 tablespoons of rum⁠
⁠~
Melt the chocolate slowly in a heatproof bowl over a pan of barely simmering water. Then, remove the bowl from the heat and add the butter. Stir until melted and completely mixed together. ⁠
Add the egg yolks one by one, stirring constantly. ⁠
Add the rum.Whip the egg whites until soft peaks form when the whisk is removed, then gently fold them into the chocolate mixture. Spoon the mixture into cups or mugs and refrigerate overnight or until ready to serve.⁠
