Beef Tava Recipe

Ingredients

1 kg diced beef

1 kg onions, diced

2 medium carrots, diced

200 g fresh diced tomatoes

2 garlic cloves, minced

1 fresh chilli, chopped (adjust to taste)

1 tsp cumin

½ bunch fresh coriander, chopped

Olive oil (for cooking)

Salt, to taste

Hot water (enough to cover meat)

Method

1. Brown the Beef

Heat a little olive oil in a large pot over medium heat.

Add the diced beef.

Cook, stirring occasionally, until evenly browned (approximately 45 minutes).

2. Prepare the Base

In a separate pot, heat a little olive oil over medium heat.

Add the chilli, garlic, cumin, and chopped fresh coriander.

Cook for about 10 minutes, stirring occasionally, until fragrant.

3. Add the Vegetables

Add the diced onions, diced carrots, and fresh diced tomatoes to the base.

Cook for 10 minutes, stirring occasionally.

4. Combine and Simmer

Add the browned beef to the vegetable mixture and stir well to combine.

Season with salt to taste.

Add enough hot water to just cover the meat.

Cover and simmer on low heat for approximately 2 hours, or until the beef is tender.

Mixed Dips Recipe

Beetroot Dip

3 beetroot bulbs
1 clove garlic
1 teaspoon salt
200g yoghurt
1 tablespoon olive oil
1/2 teaspoon vinegar

Top and tail the beetroot, then wash under running water.
Boil in a pot until soft.
Drain the boiled water, then add cold water to the pot. Peeling the beets in this water will make it easier.
Pound the salt and garlic together in a mortar and pestle until it forms a paste.
Pass the beets through a food processor, then add the garlic paste, olive oil, yoghurt and vinegar.

Serve with olive oil drizzled on top.

Humus

1 1/2 cups dried chick peas
1 teaspoon salt
1 clove garlic
1 1/4 cups tahini
1/2 teaspoon cumin
1/2 cup lemon juice
1 tablespoon olive oil
1/2 teaspoon paprika

Soak chick peas overnight.
Drain chick peas and boil in a large pot, then simmer for about 40 minutes or until the chick peas are soft.
Drain the chick peas again, this time keeping some of the water it was boiled in.
Pound the salt and garlic together in a mortar and pestle until it forms a paste.
Combine the chick peas, garlic paste, tahini, cumin, olive oil and lemon juice in a food processor until smooth. Add some of the reserved water if the mixture becomes too thick.

Serve with olive oil and paprika on top.

Cacik

2 cups yogurt
2 tablespoons olive oil
2 Lebanese cucumbers
1 clove garlic
1 teaspoon salt
2 teaspoons dried mint

Dice the cucumbers carefully with a sharp knife. Try to avoid crushing the cucumber, as this adds unwanted water to the dish, making the Cacik runny.
Pound the salt and garlic together in a mortar and pestle until it forms a paste.
Add the olive oil, garlic paste, mint, cucumbers and yogurt into a large bowl and stir gently until mixed.

Serve with more dried mint sprinkled on top.
