At Fantôme, we’re fortunate to pour wines from true collectors’ cellars — some dating back to the 1950s.
But with great age comes a delicate challenge: the cork.
Over decades, natural cork slowly loses elasticity, becoming fragile and crumbly. A rushed opening can send pieces into the wine, so every bottle demands patience, precision, and respect. We're carefully extracting the cork from a 1988 Penfolds Grange — a wine that has spent nearly four decades quietly evolving in the bottle.
The 1988 vintage is regarded as one of the classic Grange releases of the era. Produced during a warm South Australian growing season, it delivered remarkable concentration and structure, helping the wine develop extraordinary complexity over the years. Today, bottles from this vintage reveal layers of dark fruit, spice, leather, cedar, and the unmistakable savoury character that only time can create.
