Amandine is a culinary term indicating a garnish of almonds. Dishes of this sort are usually cooked with butter and seasonings, then sprinkled with whole or flaked, toasted almonds. The term is often spelled almondine in American cookbooks.

Green beans, potatoes, fish and asparagus are frequently served amandine.

Here is the Cauliflower and Bacon soup recipe as promised

Cauliflower and Bacon Soup
Ingredients
3 brown onions sliced
bacon diced
1 bay leaf
salt and peppercorns
150ml thickened cream
2 or 3 chicken stock cubes
4c boiled water
2tb butter

Method
render bacon and set aside ...keep oil from the bacon
saute onions in bacon fat and butter with bay leaf salt and peppercorns
chop cauliflower and add to pot then add 2 or 3 chicken stock cubes and 4 cups of boiled water
put lid on pot and let simmer
when cauliflower is cooked puree soup then stir in some cream to taste until it brings out the flavours
