Sixteen years of training across Europe, and it still comes down to this: fire, patience, and a cut of meat that deserves both.

This is Marcondes Almeida, our executive chef and owner, doing what he does best — searing a tomahawk to order, letting the char build slowly, then resting it just long enough for every drop of flavour to settle back in before it hits your plate.

No shortcuts. No rushing the fire. Just technique built over almost two decades, applied to a cut that only rewards those who respect it.

Light, delicate, and impossible to say no to — our Yellowtail Kingfish Carpaccio, plated by Chef Lucas.

Thin-sliced kingfish, finished with finger lime, a passionfruit vinaigrette, fennel and a touch of lemon myrtle oil… Bright, citrusy, and unmistakably fresh.
