Things are getting pretty saucy at the raw bar. Take your pick from tuna tartare with ginger ponzu and jalapeño mayo, kingfish with coconut and nam jim, Korean beef tartare loaded with chilli crunch and hoisin kewpie, or ocean trout with brown butter, yuzu and dashi.
