Meet the fire behind the feast - Chef Jerome Dalton.

With a passion for bold, elemental cooking and a deep respect for local produce, Jerome brings a refined yet grounded approach to every experience.

This May at Bunnyconnellen, we present the Fire Dome - an open-fire experience designed by Jerome in 2018. Created to bring people together, it transforms cooking into something immersive, theatrical, and deeply sensory.

Gather around the fire and witness dinner come to life. Ingredients are smoked, roasted, and flame-finished before your eyes - a performance as much as it is a meal.

For our showcase, Jerome has designed a tasting experience that reflects the way we approach catering - considered, generous, and beautifully executed.
