PRESERVE //
A clever play on preservation by the talented Nathan Van engen

Scallop Roe Bottarga

After cleaning the scallops for a ceviche, Nathan took the excess roe and salted them, pressed them, dehydrated them, and hung them.

This lead to Bottarga, normally made with mullet roe, but this time with Tasmanian scallop roe.

Confirm its awesomeness at your next dinner date.
