So happy & proud to see these two books side by side at the Byron Bay !
Both Joel Bennetts & Gareth Whitton were apprentices at PIER in Rosebay, Sydney (where I had five and a half years of undoubtedly, the best time in my pastry cheffing career !) Gareth and Joel are now on their own very successful career paths as chefs with passion & drive having had great training from the beginning !
