Firstly, I’d like to apologise to my bookkeeper.

When you said “no unnecessary spending over winter,” I didn’t realise you were also talking about black truffles.

Because when truffle season starts, and we have access to some of the greatest black Périgord truffles in the world, grown right here in WA, that doesn’t really count as unnecessary spending.

That’s a necessity.

And at $1,980 a kilo… honestly, it’s basically a bargain.

Also, if she doesn’t see this post… let’s not tell her.

Manjimup black truffles land at Ocean and Paddock this Friday.

First of the season, fresh from WA’s truffle country.

A truffle is not quite like a mushroom you see growing above the ground. It is the underground fruiting body of a fungus that forms a symbiotic relationship with the roots of certain trees.

In simple terms, the truffle fungus lives on and around the fine roots of the tree. The tree feeds the fungus sugars from the sun, and the fungus helps the tree draw nutrients and minerals from the soil. So when we talk about truffles tasting of place, they really do. They are born from that relationship between tree, soil, rain, sun, season and time.

That’s what makes black truffle so unique. It is earthy, savoury, rich and deeply aromatic — a concentrated expression of terroir, pulled from beneath the soil at exactly the right moment.

That’s why they’re so valued. That’s why they’re expensive. And that’s why, when the first Manjimup truffles of the season arrive, it’s worth making a bit of a fuss.

So tell us — how would you like to see them?

Manjimup black truffle arancini? Manjimup black truffle and cheesy potato croquettes? Truffle fries?

We’ve got a few ideas… but we want to hear yours.

I’ve been thinking a lot about krill and how important it is to the whole marine ecosystem of the Great Southern Ocean.

It might look like a tiny ingredient in a supplement bottle, but in the Southern Ocean it sits near the foundation of life — feeding whales, penguins, seals, seabirds and fish, and helping support the whole food web. Southern right whales depend on that rich ocean system to build the energy they need to migrate, breed and calve. So when I see products labelled krill oil, Antarctic krill oil, Euphausia superba oil, Superba krill oil, krill meal, or marine phospholipids from krill I stay away and eat some Sardines or Herring instead.

Working on an eggplant Parmi. Normally my favourite way to prepare eggplant is.

1.) Take one eggplant and cut it lengthwise into 3cm strip's.
2.) Throw the eggplant in the bin and grab some chicken breast and bacon.

Our of vegetarian respect I'm going to really work on this recipe.

Step .) Roast the eggplant in the oven with some smoked paprika, garlic oil, rosemary and salt and pepper. Will let you know how it goes.

Staff wanted: we are looking for another Chef and some front of house and back of house staff.
We were just awarded W.A's best fish and chips which is amazing and all thanks to our core staff who have been pulling some crazy hours over this whole summer. I'm looking for some additional key staff to strengthen the team, give my staff a lighter workload and get ready and train for a crazy summer that will be upon us before we know it.

Friday night in Perth, something pretty special happened.

Ocean and Paddock was named WA's best fish and chips at the 2026 WA Seafood Industry Awards. Our fourth time taking out this award — and honestly, this is the most meaningful of them all.

I personally haven't had the easiest couple of years, and it hasn't been the easiest start to the year for everyone in the seafood industry, upon reflection these are the moments that define us.

My first thoughts are with those that truly deserve an award, the fisherman who brave the fury of the Great Southern’s waters to ensure we have access to the best seafood in Australia. The team who show up every shift and pour everything into it, my chef Sam Onions who works longer than anyone including me, and you — the people of Albany who keep coming back.

We couldn't do any of this without you. Thank you.
