Not to design a restaurant, but to create a place that felt entirely our own.

Last evening, we reignited the fire. The kitchen came alive the way it should: sharp, focused, uncompromised.

We’re back with a clearer vision. The summer pause gave us what we needed: time to refine dishes, to perfect ceramics, to sharpen every detail that matters. Now everything comes together.

Seeing an idea slowly come to life never stops being exciting.

One part of that process this summer is our new ceramics. Every single piece is designed by the Chef, with a clear vision of how it should look, feel and become part of the dish itself. Some of those pieces are currently in their final stage with Sascha Hoffmann

Working with people who truly master their craft is one of the greatest privileges. They also have to put up with us asking for another adjustment, another curve, another millimetre. We know we’re not always easy to work with. But everyone shares the same belief: every little thing matters.

Two years ago, we shared an insight into the world behind what we do. Since then, much has evolved - not by moving away from who we are, but by growing deeper into it.

What began with instinct, fire, and passion has slowly become clearer, sharper, and more defined with time.
Never a concept. Never something created for appearance.
Simply our life’s work, lived every day.

Looking back at these images now, we realise just how much has quietly evolved since then.

While we were in Copenhagen, the work in Vienna didn’t pause. It continued, quietly.

One of our ceramic producers, .vienna , visited us here, bringing the progress on the new plates we’ve been developing together.
We refined, adjusted, questioned some details and talked about refinements.

After Copenhagen, we travel north. To the Faroe Islands.

July 18th - a four-hands dinner at Ræst with Sebastian Jiménez. One night only. Fire-driven cuisine meeting the sea’s gifts: seafood, local produce, fermentation wisdom.

Together, something unprecedented unfolds.

This chapter closes. Our final evening in Copenhagen is done.

Four weeks we spent here: showing our way, serving our food, sharing our philosophy with those who visit us. We’re grateful to every guest who found us, to the Nimb team and Tivoli Park who invited us her.
