𝗪𝗮𝗿𝗺 𝗦𝗺𝗼𝗸𝗲𝗱 𝗦𝗮𝗹𝗺𝗼𝗻 𝘄𝗶𝘁𝗵 𝗪𝗵𝗶𝘁𝗲 𝗖𝗮𝗯𝗯𝗮𝗴𝗲 𝗮𝗻𝗱 𝗥𝗶𝗰𝗼𝘁𝘁𝗮

• Piece of warm smoked salmon
• 1/4 white cabbage, thinly sliced
• 2 pickles, thinly sliced
• 1/2 onion, thinly sliced into half rings
• 1/2 apple, thinly sliced
• 10 mint leaves, finely chopped
• 2 tablespoons ricotta
• 3 tablespoons mayonnaise
• Pepper and Bonaire sea salt

Mix all the ingredients for the salad well and let them soak together. Portion the salmon and sear it evenly all around to create a nice crispy layer, but leave it juicy on the inside. Serve the salmon on the salad.

𝗖𝗼𝗹𝗱 𝗦𝗺𝗼𝗸𝗲𝗱 𝗗𝘂𝗰𝗸 𝗕𝗿𝗲𝗮𝘀𝘁

Slices of smoked duck breast
• 2 slices of bacon, cut into small pieces and fried until crispy
• 2 heads of chicory, without hard core, in strips
• 3 dates, chopped • 1/2 onion, chopped
• 1/2 apple, diced • 8 pecans, coarsely chopped
• 1 tablespoon mayonnaise
• 1 teaspoon coarse mustard
• Dash of maple syrup
• A few drops of Spika oil (Curaçao hot sauce)

Mix all the ingredients for the salad and serve with the slices of smoked duck breast and sprinkle with some crispy fried bacon. If desired, serve some extra salad sauce on the side with some more spika oil.
