Steve, our beverage manager, takes us through the meticulous process behind solar flare. From thermomixing mango flesh with agave blends to sous vide process of chamomile-infused orange liqueur, every step is carefully considered.

All to capture sundown in a single glass.

Chef's Table.

A menu that existed for one night only. The chef chose the ingredients with local farmers, then wrote the dishes around them.

Hummus with green adjika to start, then tuna confit salad and crispy feta with spiced honey. T-bone steak and slow-grilled cauliflower for the main. Grilled fruits with sweet ricotta and date syrup to finish.

Each course came with its own pairing from our wine list - Grüner Veltliner with the starters, Saint-Estèphe with the steak, a late harvest with dessert.

You won't find the dishes on the menu. That was rather the point.

The next one is already taking shape. Keep an eye on us.
