It was such a joy creating this Unicorn Rainbow Cake (almost had a mermaid in the mix 🤭)

Used an ermine frosting, which is lighter and slightly less sweet than a traditional buttercream, much to mom’s delight, and it’s definitely a keeper.

I’m reading a novel on SA history. Early years when the world was focussed on the spice trade and Cape Town, servicing passing ships to the east, became home to slaves from across the world. Especially Malay, bringing with them the use of spices to flavour food.
This B R E Y A N I brings a glorious mix of spices, complex flavours with some spice, filling our house with a glorious aroma!!

Flourless flapjacks, sort of 🙈
Finally got some flour, then some customer orders and well, no flour. So I improvised when that “I feel like something” feeling came knocking. Here is a rough guide to my oat flour flapjacks, I didn’t think they would turn out this good so didn’t take proper notes. The first pic is what was left when I finished the last batch, the family was grazing while I was cooking. The recipe made about 20.
Blend 200g rolled oats in food processor / stick blender until fine.
Add 2 tsp baking powder
1 tsp salt
Add +\- 60ml cocoa powder
Add +\- 30ml sugar
Whisk 2 eggs and +\- 1 cup milk and 1 tsp vanilla essence together and add to the dry ingredients.
Fry in a lightly greased pan over medium heat.
Tip, taste your batter before you fry and adjust sugar and salt accordingly.

These beauties caused our flour-outage.
I’m fortunate to have had a gran who baked, who I guess imparted that love to my mom and she in turn, me.
This is my mom’s bran muffin recipe. So much better than the instant packet type. Light, fluffy and moist, here with raisins and pumpkin seeds.
I always bake extra as they freeze well for a quick snack for lunch boxes.

What to do when you run out of flour? Make a flourless chocolate cake.
Found this amazing recipe on Had to convert to metric measurements but here is the recipe.
Ingredients.
➡️ 30g dark chocolate
➡️ 1/2 cup butter
➡️ 3/4 cup sugar
➡️ 1/2 cup cocoa powder
➡️ 3 eggs beaten
➡️ 1 tsp vanilla essence
Method
➡️ Melt the chocolate and butter together in double boiler
➡️ Add the sugar, cocoa powder, eggs & vanilla
Bake in a greased cake tin, dusted with cocoa powder in a pre-heated oven of 150 C for 30 min.
Enjoy!
