One of the biggest dreams behind Gypsy Bowls has always been to create more than just a food truck. I wanted to create a place where people could enjoy fresh, wholesome food served as quickly as possible, with the friendliest service around.
If you’ve followed us for any length of time, you’ve probably noticed I almost always call you “friends.” That’s intentional. “Great food. Good vibes.” isn’t just a catchy tagline to me—it’s the culture I’ve worked incredibly hard to build. I try to remember names, ask about your families, celebrate your wins, and create a place where everyone feels welcome, seen, and valued.
Before I started Gypsy Bowls, I was a social worker. That experience shaped who I am and how I run this business. I truly believe every person deserves dignity, kindness, and respect. That belief doesn’t stop at the service window—it extends to the amazing people working inside this trailer, too.
It saddens me that I even have to say this, but customers speaking disrespectfully to my staff or standing outside our windows making hurtful comments about them will not be tolerated.
Please remember that there are real people inside that trailer. We work incredibly hard. We care deeply about serving you well. And yes—we can hear what is being said outside our windows.
My crew treats every customer with kindness and respect, and I expect that same courtesy in return.
Recently, a member of my team had to step outside the trailer so customers wouldn’t see them cry. That broke my heart.
That is a boundary I will not ignore moving forward.
Gypsy Bowls is absolutely a business, but it is also a family. These are people I love, trust, and care about deeply. No sale, no line of customers, and no amount of money is worth sacrificing their well-being.
To the overwhelming majority of you who encourage us, laugh with us, offer patience on busy days, and make this such a joyful place to work—thank you. You are the reason we get to do what we love every day.
Let’s continue making Gypsy Bowls a place filled with great food, good vibes, and kindness—for everyone.
