We’re proud to partner with Base Camp Coffee, a local coffee shop right here in Cumberland, Maryland, to create the bold espresso that gives this cocktail its rich, smooth flavor. Meet Lauren Broadwater, Restaurant Manager of 1867 Modern Chophouse!

Born and raised in Allegany County, Lauren is proud to return home and bring her passion for hospitality to The Wills Hotel. With over 15 years of experience in the restaurant industry, she has built her career through leadership roles in restaurants, bars, and hospitality operations, earning a reputation for exceptional guest service, strong team leadership, and creating memorable dining experiences.

After beginning her career at a local restaurant, Lauren moved to Florida, where she spent several years managing high-volume restaurant operations along the Emerald Coast. Having worked in nearly every front-of-house role—from hosting and serving to bartending and management—she brings a well-rounded perspective to restaurant leadership. Throughout her career, she has focused on building strong teams, developing future leaders, and creating environments where both employees and guests feel welcomed and valued.

Now back in the community that helped shape her, Lauren is excited to bring that experience home. As Restaurant Manager of 1867 Modern Chophouse, she is focused on delivering exceptional guest experiences, fostering a positive workplace culture, and building strong relationships within the community. Lauren believes great leadership starts with being present, supporting your team, and creating an environment where people can succeed. She takes pride in working alongside her employees and helping create a culture built on respect, support, and shared success. Lauren is excited to help create a dining destination that reflects the warmth, pride, and welcoming spirit of Allegany County.

Here at 1867, we have a perfectly bronzed salmon atop creamy Tuscan orzo with spinach, tomatoes, basil oil, fresh parsley, and grilled lemon.

A dish built on balance rich, bright, and full of flavor in every bite.

This dish pairs well with any of our white wines, but especially our Seaglass Chardonnay, available by glass and bottle. 🙂
