This is a cottage industry owned and operated by descendants of Una Burgin nee Jackson whose father, Carl “Chubby” Jackson was the owner of the once renowned Birds and Eggs Restaurant. Joyce, Marcelle, Mariel and Marese are the daughters and grand-dau
ghters involved. Our Home-based goodies are made from primarily locally sourced raw material. Our treats include a variety of baked goods plus, guava cheese, jelly and jam, glacee d'arachide and au lait, doughboy, madungo bakes, yule log, gateau noir, cross buns, salted and unsalted peanuts, wheat'n'oat bread, tamarind balls and syrup, sauce picante, green seasoning, and damsel stew. We also do catering for small gatherings where authenticity is required. Our products are not sold commercially by choice since; our aim is to maintain the very high standard and quality required to continue our family tradition. We have been satisfying the appetites of a myriad of persons for over sixty (65) years starting with our Mother, Una Burgin . Our mission is to maintain the family tradition of specially created products. Joyce and Marcelle have been in this business for more than 25 years adding Marese and Mariel in the last two years. Joyce is a Trained, Qualified and Certified Nutritionist. She is also certified in Hotel Catering and Institutional Management providing the necessary guidance in our work. Nutrition and quantity matters are regarded highly to ensure individual needs are met in all our recipes and products. p��a�u
Marcelle is a Graduate Teacher and spends a great deal of her spare time experimenting with new recipes for sweet treats. She uses her psychology training to understand the precise needs of our clientele. The twins, Marese and Mariel are Community College students and make time to perfect their salted and unsalted peanuts. Their mother, Marcia who passed on in December 2002, had her own small business. At Una’s Legacy, we all take time to assist each other to ensure quality is kept at its highest level.
