10/11/26 Good Morning. It's true, I've lit the smoker and soon the aroma of Cherry Wood and Hickory will fill the air, and it will soon be joined by the amazing aromas of DUROC PORK, BABY BACK RIBS AND JUMBO WINGS! What better way to spend a lazy day on this Sunday than a little FOOTBALL OR BASEBALL and a RACK OF SLOW SMOKED RIBS AND TWO POUNDS OF JUMBO SMOKED THEN FRIED WINGS? We are adding a BOURBON-MAPLE DRY SEASONING FOR THE WINGS. I had hoped to smoke BRISKET, BUT THAT WILL NOT HAPPEN TODAY, NEXT WEDNESDAY I'LL SMOKE THE BRISKET.

The response to our ALL-NATURAL JOYCE FARMS CHICKEN ,AND THE SPECIAL DINNER WERE SO GOOD, I'VE DECIDED TO OFFER IT AGAIN TODAY, FOR A 4PM PICK-UP, 3.5 POUND AVERAGE ALL NATURAL CHICKEN, MASHED POTATOES AND STUFFING FOR $49.95, NO CARROTS TODAY...BUT AMAZING CHICKEN, with a twist, BBQ SMOKED CHICKEN...THAT'S RIGHT, I'LL BE SMOKING THIS BATCH OF BIRDS.

The Thanksgiving Menu will go live this week, hopefully even tomorrow. Bryce and I have been working on setting up the order system online. I'll have two prices on birds, pricing for the day before Thanksgiving Pick-Up and the day of Thanksgiving pick-up. I'll offer the choice this year and see what the consensus is. We will also have a very limited amount of Joyce Farm's Turkeys inn addition to our All-Natural Butterball Turkeys.

We have a wide variety of foods today, hours of operation today are NOON-5PM, I'll open the ordering for Ribs and Chicken Dinners momentarily, keep in mind the times they'll be done, Ribs estimated time is 2PM and Chicken Dinner 4PM. The Pizza Dough is amazing, these cooler temperatures make a big difference in the fermentation process, and the Ciabatta Sandwiches, the Roast Beef Ciabatta is too good to pass on, order one today.

10/9/26 What a day! The power goes out when I’m halfway through baking bread and cookies, residual heat finished them up thankfully. Then the DEPARTMENT OF HEALTH comes in for the quarterly inspection, we received 100% , we’ve accomplished this grade on every inspection we’ve had here and the last five on the food truck, quality and cleanliness matter to me. Then a big lunch rush, two deliveries, and all kinds of special orders, Evie and I did it, all done.

10/9/26 Good Morning. I came in early to prep, and for the most part everything is completed, but the power has gone out. It seems the road crews hit the power line, my cookies and Ciabatta Bread were in the ovens, seems the residual heat baked the first batch, the rest is on hold, and so are we, can’t operate without power.

I sliced ROAST BEEF AND CHEDDAR CHEESES, for a Ciabatta Sandwich that will be flavored with our ATTITUDE SAUCE, a chipotle pepper and garlic sauce people love. I hope to make crab cakes later too.

The power just came back on at 11:46am, going to give it a few before opening everything back up.

10/7/26 The PUMPKIN PIES are in the oven, should be ready for dinner hour. The CHOCOLATE CHIP AND HEATH BAR COOKIES ARE READY, GOAT CHEESE CHEESECAKES are in the oven and will be ready for tomorrow. We have PASTA FAZOOL AND PULLED PORK BY THE POUND $15. We have TIRAMISU and COLLARD GREENS.

10/7/26 Good Morning. I'll be leaving for the restaurant soon, a lot to do today. The ordering for the JOYCE FARMS CHICKEN DINNER will go live at 11:30AM, pick-up is at 5PM and after. This is a great deal on a freshly prepared meal using clean ingredients.

I'll be baking today as well, if all goes to plan I'll bake the following items, the cheesecakes take a day to set up and won't be ready until tomorrow.

1. GOAT CHEESE CHEESECAKE

2. CHOCOLATE CHIP-HEATH BAR COOKIES

3. PUMPKIN PIES

4. IF THERE IS TIME, PECAN PIES

A little taste of Fall on these clean and crisp days. The kitchen is so much nicer to work in now, and being solo in the kitchen it helps with the temperatures not being so high.

The THANKSGIVING MENU WILL GO LIVE THIS WEEK TOO, PRE-ORDER ONLINE. MY INTENTION IS TO OFFER TURKEYS FOR PICK-UP THE WEDNESDAY BEFORE THANKSGIVING. I'LL HAVE TWO TYPES OF BIRDS THIS YEAR, our usual All-Natural Premium Butterball, and an amazing bird from JOYCE FARMS, which will be a higher price due to it being a more expensive bird. Joyce Farms is a small sized farm from the Carolinas, we are using their chickens today. I would switch over completely but limited supply and cost being a factor, so we'll see how they go this year and make note of it for future years. I will offer pies and some sides this year, crab-dip, collards, pimento cheese, stuffing and pecan and pumpkin pies, and possibly mincemeat and/or apple pies.

Additional information. Read the labels, we use Extra Virgin Olive Oil and Avocado Oil only, and we fry in Beef Tallow. Real Butter, organic, organic sugar, no fructose, organic cream, 15 organic flours, cage free and pasture raised chicken and their eggs too. And much more.
